JANICE CAMPAGNA’S SPINACH CHEESE PIE (aka Space Improvement Day Spinach Pie)

  • 6 Slices Bacon
  • 1/4 cup Chopped Onion or to taste
  • 2T Butter
  • 2 - 10 ounce packages of frozen chopped spinach, cooked and drained and squeezed
  • 1 cup Ricotta Cheese
  • 8 oz. Cream Cheese
  • 1/4 lb. feta cheese
  • 4 Eggs
  • 2tsp Farina, or Cream of Wheat, or Minute Tapioca
  • Salt and Pepper to taste
  • 1/8 tsp fresh nutmeg
  • 16 sheets of Phyllo Dough
  • 4-6 Tbsp Melted Butter
  1. Chop bacon into small pieces and fry until crisp. Drain onto paper towels.
  2. Remove bacon grease from pan and saute onions in 2 Tbsp of butter until softened and translucent.
  3. Add drained spinach and bacon.
  4. Blend well and saute for 5 minutes
  5. In a mixing bowl, cream the cream cheese and mix in ricotta and feta cheeses.
  6. When well blended, add 1 egg at a time and mix until blended.
  7. Add tapioca/farina/cream of wheat, salt pepper and nutmeg.
  8. Fold in the spinach mixture.
  9. Thaw phyllo dough according to directions on the box.
  10. Using a pastry brush, butter the bottom of a 9 x 13 baking pan.
  11. Layer 8 sheets of phyllo, brushing each sheet with butter.
  12. Pour in spinach mixture and level off with a spatula.
  13. Cover with another 8 sheets of buttered phyllo.
  14. Pre-cut the pie into squares.

Bake at 350 degrees for 45 minutes. Let cool for 10 minutes.

Can be frozen before baking, cover with heavy duty aluminum foil. The cook when frozen, place casserole in fridge overnight and bake as directed.
